Knephleas


I've been on a bit of a German kick after attending a German food festival a while back. They had the most delicious braetzels (giant, chewy pretzels), a wide variety of sausages (some looking less appetizing than others), sauerkraut (which is delicious by the way - my first try) and also a lovely stew called Szegediner Gulaszch, made with pork, sauerkraut and lashings of paprika. 

Minted Pea & Spinach Soup


I've been looking at green monster recipes online recently (like this one), and was inspired by their bright green fresh look to create something similar. Unfortunately, it's not really smoothie weather here (and besides, the idea of spinach in a smoothie is still a little bit weird for me...), so I thought that a vibrant green soup would be the next best thing. And perfect for the drizzly grey day we had yesterday.

Sweet Potato Burritos

 
When I saw this recipe on Fitsugar, I thought it sounded pretty interesting, but what with our new resolution to shape up and tone up I knew I had to give it a go. It promises to be low in fat and low GI but still high on taste (no mean feat...) and it really delivers on that! 

Bobotie


(Pronounced Buh-boor-tea)

This is one of my favourite traditional South African dishes. Bobotie has been heavily influenced by the Cape Malay cooking style and is a curry-flavoured mince bake with a savoury egg-custardy topping. It is traditionally served with 'geelrys' (translation: yellow rice) which is made by adding some turmeric and afew raisins to the pot when cooking normal white rice.

Rooibos Chai Latte Cupcakes



I got the recipe from Love & Olive Oil (one of my favourite foodblogs) and adapted it slightly according to what I had on hand. These cupcakes are simply delicious, not too sweet, just spicy enough, moist and chewy.

Fish Burritos with Guacamole and Coleslaw

This is a great meal when you're short of time but don't want to run to the nearest take-out menu. It received the thumbs-up from TheHusband on Saturday, which is saying a lot, considering he is not all that fond of fish. 

Coconut Cupcakes with Lemon Glaze

I've been on a cupcake kick this past week (what with my upcoming birthday on the 21st). These are based on the cupcake recipe found here but with the glaze found here instead of the buttercream frosting. I'm not a big fan of butter-based icings (yes I'm weird like that)... The lemon glaze really makes the coconut taste pop.

Beetroot Soup


I actually bought the beetroot to roast in the oven, along with some other winter vegetables, but it was such a miserable day that I decided that soup would be the only thing that could sufficiently warm us up.

The dorm where I used to stay in varsity used to serve this quite regularly and this is my approximation of it. It's very straightforward and surprisingly tasty for it's simplicity.
