Teriyaki Chicken Salad


You know what I hate? Getting to that place where you know it's become time to move on. Again.

Whether it's in my personal life or professional life, it always leaves me with an unsettling feeling deep down in my stomach. Change is good (and sometimes very necessary), but it's never nice leaving those now-very-comfortable people and places behind. Even though they might now irritate the living daylights out of us. Or actually be harmful to our wellbeing.

Chickpea, Apricot & Walnut Salad



Carrying on with my Tex-Mex theme (as evidenced by my Spicy Mexican Beef Skewers and Tex-Mex salad), I bring you... well.... a not so tex-mex-y salad. But it did hang out with some cacti... so I think we can at least give it honorary Tex-Mex status! Eh... probably not, right? Oh dear.. now the salad is skulking away in shame.

Let me tell you I am feeling the burn! My arms have officially taken up arms against me. At least, that's what it feels like. This of course is the result of my first two exercise sessions of the year (and indeed the first in a couple of months) that I so valiantly embarked on earlier this week. Don't get me wrong, normally I *like* feeling the burn. Odd? Perhaps, but it gives me a strange satisfaction and of course also warrants me having a smug smile on my face for a few days. But this? This is insanity!

Back to school, back to reality as they say, right? No that's not really indicative of my mood. I've actually had a really relaxing holiday and as such I feel refreshed and ready for the new year. Who's with me now? The start of a year (and a decade at that) should be full of hope for what's to come and I'm definitely feeling that vibe. 2010 is going to be full of great things.
